Beef-stuffed Zucchini Boats

Ingredients

1 lb ground beef
2-3 large zucchinis
2 T olive oil
1 onion
2 cloves garlic
Pizza or Marinara sauce
1/2 cup cooked brown rice
Fresh herbs from the garden (I used basil and oregano..lots!)
1 1/2 – 2 cups shredded mozzarella cheese

Directions

– slice zucchini lengthwise and place on cookie sheet

– spray with olive oil and sprinkle with salt

– place under broiler until they start to slightly brown, about 5 mins – cool

– scoop out seeds and pulp, leaving about 1/4″ thick wall on the sides & bottom, reserve pulp

– coarsely chop pulp/seed mixture and set aside

Рsautée chopped onion in olive oil Рadd garlic and cook one more minute or so

– add ground beef and brown, add pulp mixture and cooked brown rice and cook about 5 min more. Add salt and pepper

– spread pizza or Marinara sauce in bottom of “boats”

– add meat mixture (I also added cooked mushrooms)

– if you have sauce left, put it on now!

– Sprinkle with herbs

– top with mozzarella cheese and more herbs if desired

– cook @375 for about 20 min, or when zucchini is tender when pierced with a sharp knife & the cheese is browned and bubbly
